Unpasteurized vs. pasteurized kombucha
We only sell unpasteurized kombucha. For one simple reason! During pasteurization, the tea drink is heated. In the process, it loses almost all of its valuable nutrients and probiotic bacteria. In the end, it's still a refreshing drink, but nothing more than a soft drink.
How long does kombucha last if I make it myself at home? How do I store the fermented tea drink?
The finished tea drink can be stored for up to 9 months. After bottling, the fermentation process does not automatically stop. From time to time, kombucha becomes a little sourer and develops more sparkling natural carbonation. However, it never really goes bad. Therefore, the drink should be stored as cool and dark as possible. This is best done in the refrigerator or in a cold cellar room. Here it is exposed to only a few external influences and can be stored in peace. The shelf life can thus be extended by some time. By constant cooling, the fermentation is delayed, and it only slowly becomes a little sourer.
Beware!
Some large kombucha manufacturers pasteurize their drinks and add artificial probiotics, then advertise them as a probiotic drink.
